Villager changes occupation after already being locked in

I’m on the latest version playing on a realm. I just locked in a villager trade, took that villager to my base, trapped it in a cell, and then he switched to a mason. I went to remove the stonecutter but he’s still a mason. He still has the experience from being a librarian
