Steps to Reproduce:
1. Find or create a new unemployed villager.
2. Place a job site block (e.g., a Lectern for a Librarian) near the villager.
3. Wait for the villager to claim the job and change its profession.
4. Do not trade with it. Simply open and close its trading interface to see its available trades.
5. Save and quit the world.
6. Re-enter the world.
7. Break the job site block (the Lectern).
Expected Result: The villager should lose its profession and become unemployed again because no trades were ever completed.
Actual Result: The villager's profession remains permanently locked.It keeps its profession and does not change even after its job site block is broken. It behaves as if a trade has already been made.

I just placed and removed the job site block again a few times, and the villager lost its job once more.
