Can't stream or record Minecraft

I’ll start with this: https://www.youtube.com/watch?v=G1KH6n1iBhI It’s the best description I can give of the issue. I literally can’t record or stream Minecraft without it overloading OBS’s encoder. On its own, Minecraft has had mild lag spikes, but trying to record, it has choppy video and terrible audio.

I think these are the OBS settings that would be involved:

As far as OBS is concerned, they work best with my computer:

Processor AMD Ryzen 7 3700U with Radeon Vega Mobile Gfx (2.30 GHz)
Installed RAM 16.0 GB (13.9 GB usable)
System type 64-bit operating system, x64-based processor

All I can say is before the update, I’d get a little bit of encoder overloading, but nothing as bad as it is right now.

I haven’t fussed with these settings since Vibrant Visuals came out. I tend to keep it on simple and not tinker too much. I’m not much of a technical person, so I tend to not fuss with settings and usually leave them on default. Whatever this bug/problem is, it got worse with the update. I even tried uninstalling/reinstalling both Minecraft and the launcher. I know OBS is up to date. Restarting the computer didn’t fix it, either. All I can say is the video shows what’s going on the best and I hope it can be fixed soon.

So, expected result: be able to stream Minecraft

Actual result: laggy, choppy video/audio and OBS encoder overloading constantly

All I know is that before the 1.21.120 update, I could stream with few problems and after it and the hotfixes that followed, OBS crashes because the encoder overloads. The real thing that makes me think it’s a Minecraft problem is the fact I can stream other games just fine. The audio is smooth and so is the video. I’ve had no choice but to stream other games since the update and hotfixes. My youtube channel’s too small to just take a break from streaming and have people still watching my vods and keeping it alive.

This is my first time creating a bug report so I hope I’ve included enough information to get the problem solved.
