To reproduce the issue, turn the switch 2 joy con sideways to activate it’s mouse controls (mouse mode). Try to play as if you would play with keyboard & mouse. It doesn’t work. It should switch to a keyboard & mouse mode.

There is no Switch 2 version of Minecraft, so it will not support Switch 2 features.
Judging by how long it took them to release PS5 version, Switch 2 version should release in about 2-3 years.
