On 2 occasions I have had items (armour and weapons) vanish after dying. I lost two items of armour in lava in the nether and a sword and custom enchanted shield on land by zombies. Both times I returned well within the time of the items de-spawning. The armour was trimmed, and all of it was fully enchanted netherite. All other items were ok.
