Minecraft villagers and professions

I was playing in a hardcore world and decided to trade with the villagers, I placed a fletching table and traded with the villager and upgraded him to apprentice level. I decided I wanted to move the fletching table back a little and when I removed the fletching table the villager took on a tool smith job but kept the apprentice level trades.
