The villagers keep changing. I watched a villager change from a librarian to a farmer. I locked him by himself in a house and then he changed a couple game days later into a stone mason. Then I watched him change back into a librarian. Happened again with a few of my other villagers. They keep changing.

this has been discussed quite a bit on the forum.
if a v2 cant reach their owned profession block, they break ownership and randomly take ownership of an available profession block within range.
v2's also need to be "locked" to that profession. this is reportedly accomplished by trading with them. unlocked v2's can apparently switch/trade professions covertly. ie without showing signs of having broken ownership with their profession block.
