Apparently, there's no crafting recipie for carpets. I hope this will be fixed in an upcoming beta release. Thanks.

I'm pretty sure you have to have enough wool for the color of carpet you want to make and then the recipe will appear.

It is now possible to craft a single red carpet, more colors to come in future releases... we don't have space to show them!
