I noticed when exploring the dark caves in my world that there was not a single mob to be found. i did find some skeletons at the top but they were being created by a spawner, i also noticed at night there was a very reduced presence of mobs. Also they didn't spawn in dark areas near the open either.

This is generally caused by a build-up of mobs in the area that aren't despawning. You can test this by switching your difficulty to peaceful and then back to your normal difficulty.
Please try this and see if it helps.
