I have been using a looting 3 diamond pickaxe and none of the ores I was mining were dropping any extra drops.

I assume you actually mean "Fortune" as you can't enchant a Pickaxe with "Looting"? We're actually already tracking this issue under MCPE-67169 so I've requested this report be resolved and linked as a duplicate.
