I have no idea how this happened. The village just... has no villagers. I checked, and it wasn’t a zombie village either. There were just no signs of life, not even an iron golem.

It does not contain enough information and as such, we've unable to understand or reproduce the bug.
In cases like this details of the seed and location of the village are crucial. Its also possible, if you were working nearby, that the villagers were killed by mobs before you arrived.
