Since nether update game broken

since the nether update this week there are a few issues I am playing Xbox one x version
1 when fishing green ep dot is surrounded by black box and as it approaches you it causes graphics glitches and what you catch is almost unidentifiable
2 onscreen text is in black box when it appears over the tool or weapon you have selected
3 and most frustrating I have spent 1000 hours on survival mode building my world I am currently building underground what I'm calling my Russian doll pyramids a series of 8 pyramids inside each other which I'm carving inside of a mountain from bedrock level Y5 and now the areas which I have put up thousands of torches and dozens of steal doors to make safe zones to work in, now all I get is continuously spawning mobs spawning in them all the time you just kill one lot and another lot appear almost immediately predominantly big green boxes and creepers this is making game almost unplayable and has totally destroyed the games enjoyment please can you sort this as before the update there was not an issue I have included screen shot of the environment I'm working from befor the update that didn't have these issue
