Not sure on the exact cause of the freeze/crash, but it involves shulkers.
Try the following to reproduce:
1. Break the shulker while it is doing its closing animation
2. Have another player break the shulker while it is opened.
3. Have another player stand on top of the shulker while the shulker is being opened.
(Side note: players turn invisible if they stand on top of a shulker when it is opened.)

It took me some time on what freezes the game. But I finally found the issue like 2 days later, it was this. This bug happens with windows 10 as well and the newest version 1.16.10.
For me though, it's when a player jump opens a shulker box. That's the time when my game freezes. Not sure though, but I believe this only happens to users that is not opening the shulker box and like within the chunk or simulation distance, again not sure.
