I had a group of zombie villagers that I cured and gave professions that I preferred, after trading with them to lock in the trades (he was a cartographer) I started transporting him to my house, and about halfway there he swapped to a butcher, despite being locked to a cartographer, and now that he changed and I previously traded with him he won't switch back to a cartographer
