When an Ender chest is mined with a netherite pickaxe, we only get 8 obsidians blocks like if it was broken. Only the diamond pickaxe works for getting the ender chest as item in the inventory. This is not supposed to happen because the netherite pickaxe is a better pickaxe than the diamond one.

It can be mined with any pickaxe. However you need silk touch enchantment on the pickaxe for Ender chest to drop. Without silk touch ender chest will be destroyed and only drop 8 obsidian.
