Every single time for example I leave the nether I get teleported to a random location wether it be if I go inside or outside the nether I get teleported somewhere randomly even though we're not making any new portals we're just using the ones we made

This sounds like the issue I'm experiencing. The portal I created (10 obsidian) in the overworld would take me to the Nether, and I'd be able to come back out through that same portal a few times. Then suddenly one return journey pops me out through a game-created portal (full obsidian) near to my own original portal.
From then on both overworld portals take me to the same portal in the nether, but the nether portal only sends me back through the one the game created.
It wasn't so annoying when it happened the first time, but the second time it dumped me far underground. And this happened with a portal I created where a broken nether portal had spawned in the overworld.

What are the exact coordinates of the portals where you are being teleported to?
Does a portal get created when you are teleported to an unexpected place?
