On iPadOS (and iOS?), attempting to change the "Project" option on issue creation screen selects the pre-existing text, and the blue selection highlighting shows over the dropdown menu and clicking on an option under the highlighting does not work.
(A possible solution might be to use Apple's built-in dropdown menus.)

Unfortunately, because the bug tracker uses software from Atlassian Jira and is not programmed by Mojang, in this case, there's not much we can do about this issue.
