Try to download the 1.21.5 server jar from either https://www.minecraft.net/en-us/download/server or https://www.minecraft.net/en-us/article/minecraft-java-edition-1-21-5, and try to launch the server and you will notice it says in the log “Starting minecraft server version 1.21.4” even though you downloaded a 1.21.5 server. You also can’t join the server if you use version 1.21.5.

I am unable to reproduce. Downloading both of these gave me a 1.21.5 server.jar
