The zombie was wearing that armour set, when that zombie turned into a Drowned it dropped all of its armours with full durability, then because you went away from the Drowned it probably despawned.
Check the world's setting, did you enable "tile drop"?
They merged 1.15 inside 1.16. The Nether Update is 1.15 (game fix and Java parity) + 1.16
This is a very useful feature. Intended or not, I think this should be left as it is for flexibility.
The worst part of this bug is sometimes it even prevents me from rolling back to a previous save file and lock everyone out of Realm (infinite loading screen).
