Unfortunately, the reason why this is happening is due to Minecraft Java now using Java 17, which is what 1.18 is using.
Java 17 is not supported on Mac OS versions below 10.14.5.
You will still be able to play older versions.

The game uses "true" fullscreen mode so this is expected to happen. We don't support fullscreen (windowed).

This is true, but only for the Overworld, therefore this bug is Invalid.
This is not something we will track as a parity issue as it's not something that we consider to be a "gameplay feature".

Confirmed on 23w33a. Minecraft turns HDR off in Windows 11, but Windows says that it's still enabled. Turning the HDR setting off/on enables HDR again.
