I've seen the same thing happen. I harvested an 18x18 crop area at full saturation and lost 3 shanks on it. I also completely lost all shanks swimming about 750 blocks from spawn to my base.

This issue needs to be fixed asap. When in the end cities, shulkers will hit you and you levitate into the blocks, unable to move or get away, as they keep hitting you. You're stuck there indefinitely. FIX THIS MOJANG! THIS HAS BEEN HERE SINCE 1.16 RELEASED!!
