We have a realm where this issue appears to affect one village and not another. The villages are in similar biomes with similar geography, nothing too extreme. One that has the problem spawned before the issue was reported resolved (prior to this being re-opened) and another after, so we conjecture that the issue may be related to saved chunk data/format. In any case the only thing that seems to affect this (the only control we seem able to exert) with the bugged village is that if we can keep villagers within a certain radius of the player (exact distance unknown) they tend to remain spawned; and if the player wanders away from them, and returns, we tend to observe what we have taken to calling 'an event' where as much as 50% of the villagers may have de-spawned without a known cause.
We have also watched non-villager mobs spawning rapidly (as often as 8 times per in-game day) and then walking a short distance (10 blocks or fewer) and de-spawning at what appears to be a chunk boundary. Approaching the boundary does not seem to cause the de-spawned mob to re-appear, but does often trigger another mod spawning at the opposite edge of the same chunk. (I realize this may conflate 2 separate spawning-related issues. I'm happy to add this as appropriate to another open issue that may be relevant.
These issues occur on Realms and so they apply to the most recent release of Bedrock as of this date.
