I have a theory that it is involved with the chunks, I have a massive sheep farm with large sections dedicated to each color, after the bug, two sections were unaffected, some had about half missing, and the remaining had no sheep at all. On top of that, my villager trading hall was unaffected, yet the villager breeder I use to supply it was completely wiped when it isn't that far away.
