This is also happening to me on my realm as well and I can find no possible way to fix it and I need it urgently fixed because I can pretty much do nothing now
I play in a realms server with a small amount of lag. I am also experiencing this book issue and the anvil issue the user Ben mentioned. Would really like for this to get fixed soon as it is a big inconvenience. UPDATE: I attempted to sign a book and it un-signs itself by equipping twice. It look like the first equip is the updated version (signing it or editing text) and the second equip is the book reverting back to its previous state.
