To get it working (by that I mean playable, not enjoyable), for AMD FirePro M5100, I did these steps...
Close out of game if running.
Right-click on desktop (not icon).
Select Display Settings.
Under Display, scroll down and click Graphics settings.
Select Microsoft Store app, under "Choose an app to set preference".
Select Minecraft from the "Select an app" drop-down.
Click the Add button.
Click on the Options button for the Minecraft item
Select Power saving mode (so that the AMD FirePro M5100 is NOT being used)
Click the Save button
Close out of Settings window
Launch Minecraft.
My GPU option for power saving has it using Intel(R) HD Graphics 4600 (onboard graphics, which sucks, but I can play MC at least, it's just not pretty)
Note: You will probably get a warning from Minecraft like this: I ignored it.
