When I hold a shield and load a crossbow, the way I hold the crossbow is with two hands instead of one and one hand with nothing in my offhand

I'm only able to craft wooden tools from the recipe book but have to manually put in the recipes for the other types of swords and I can't craft armor from the recipe book. Plz fix this.
