Can confirm it happens here, too. Signed up for Microsoft Insider so kids can play the beta. It was the current XBOX series X beta offering as of this morning.
To keep my 11 year old player 1 from murdering her 9 year old brother we exited the beta for the time being.
He couldn't mine blocks. He tried to harvest sugarcane... The bottom block disappeared and the plant just hung there... Except sister saw the entire plant unscathed. Pumpkins the same way.
It did help in one way... They were hiding at night underground and my son could check to see if it was morning yet by destroying blocks to look outside. But, to everyone else the blocks were there.
