Pasting the description of my report here, because it’s marked as duplicate.
It contains a bug reproduction guide/demo and new information:

First occurrence: 1.18.30, reliable reproduction
When both un-rendering or re-rendering nearby areas with many detailed surfaces (lots of trapdoors, buttons, banners, plants, partial blocks etc.), internal game updates seem to freeze.

Steps to Reproduce:

Notes:
It is less likely to happen the lower the render distance is set to. In my demo, I'm using a
render distance of 30 which reliably reproduces this issue for me, my recommended is 48. Render distance of 5 is preventing this from occurring

1. Load a world with many exposed/detailed surfaces, (e.g. over detailed structures) which
are causing frame rate drops, while being in close vicinity
2. Cause those said structures to become un-rendered to save resources (e.g. going below
ground while facing away from it
3. Cause them to be re-rendered, at the moment said occurs, the game stops to function
properly (-> please use video for demonstration)

Observed Results:
*Causing any progress/changes to be lost and making the world unplayable for the current session*

The game won't leave the saving screen upon closing the world.
° Inventory cannot be opened, pick block does not work
° commands (like set time) do not work
° no block updates (carpet and berry bush remain floating after removing their
supporting block)
° Entity's stop moving/lose their collision properties
° Entity's cannot be summoned into the world (e.g. by throwing a trident)
° No particles/ sound while mining blocks
° Particles work incorrectly in general (candle isn't flickering properly when lit, etc.)

Ok. I‘m confused, but surprised and happy.

Well, it turned out that since 1.14.2 hotfix, it depends on what wifi connection I‘m
using Minecraft. Frankly, in a public space hotspot (since 1.14.2), none of the issues I‘ve described in my previous comments are existent. The Connection very smooth and reliable and the app is (maybe) working twice as fast.

I‘ll update if I should find out more, and hope I haven’t caused any unnecessary troubles with my report

Sum up:
•Only the crash on Startup when having no functional internet connection is always true (for me)
•I don‘t know in which situations the rest of my report is applicable, I only know the issues appear at home (everything else about my internet network is reliable), I haven’t tried others yet

Edit:
Installed 0.14.2 on iPad (Postponed it), the situation has changed a bit. It‘s a general improvement, but sadly no (entire) fix.

Noticed changes/issues:

  • In title screen (not playing in world), it will no longer crash when internet connection is interrupted (for ~5 to 10 minutes).

  • Realms and servers won‘t likely show loading failure upon game start up, marketplace/character creator content loading is likely has a chance to be functional. Connection is unreliable tough, causing (e.g. the realms) to disconnect after trying to access marketplace etc.
    -Only when doing wi-fi workaround in screen recording: marketplace can be accessed with a high chance, allowing to browse/show personal purchases, characters load mostly, but often incomplete (3/5 of characters)
    --If it shows no connection at all, restarting the game completely will give it a high probability to be functional again-
    -When realms/servers are stuck in loading or are unavailable (also upon startup), opening worlds is possible, but it freezes mid loading, which can be simply forced to complete by disconnecting internet and a quick reconnect.
    (That was also the behavior before 1.14.2, but only after I have already successfully loaded a world using that “workaround“, and loading a second world in the same game session)
    -When realms/servers are loaded, worlds start normally.
    -Game will still crash when starting up without functional internet connection

Sum up:

-It‘s mostly like the behavior after I successfully used that “workaround“ with forced game crashes before the 1.14.2 hotfix, but with a much higher rate of success upon startup to have a functional game while signed in, without any crashes.
•General Stability improvements
•Content of any kind can be accessed easier, with loading to be more functional.
•Worlds can be opened normally (in most cases often), making it possibly
playable without workarounds

Have same issues, but only for my iPad Air 3 with iPad OS 13. On my second device, iPhone 7 with iOS 13, no issues of this nature are present. Both are signed in the same account.
_Took another look on this on my phone, found it‘s having similar issues, just not as present as on iPad and the „workaround(s)“ are not applicable. Signed it off my account (since I don‘t use it for playing anymore),
it seems that whether I‘m signed in or off has no effect on this issue._

For me, it didn‘t start crashing with version 0.13.0 directly after updating Minecraft, but as soon as I have upgraded my device to iPad OS 13, which I have postponed to maybe two months after official release. That was after some bugfixes were already released for Minecraft, as it happened. Multiple reinstalls across updated versions didn‘t help to fix this issue.

I noticed following issues:

  • Game crashes in Start-up in about ~1min when no functional internet connection is present

  • Crash also occurs when internet connection is interrupted when not playing in a world
    -After Start-up, account is signed in, but (very often) fails to synchronize with servers, resulting in Marketplace „downtime“ (message: no internet connection is present), error messages for skins from character creator, missing server list and realms etc.
    (likely to crash by itself after random time, with functional internet connection)
    -Worlds will stop loading for me in loading screen, text disappearing, freezing and eventually crashing as well in ~1-2 minutes (even when internet connection is functional)

  • Sometimes: Content/Data loaded halfway/very slowly (e.g. only 2/5 characters loaded or the animation on the marketplace button on title screen appears after ~1 minute)

But I found a way to make it playable for me while signed in (“workaround“):

  • Have functional internet connection, start up game

  • Check after about ~15 seconds if realms or „Try realms free“ with username is loaded above all worlds in world selection screen

If yes, it‘s playable and worlds can be loaded successfully, crashes occur rarely, but it will eventually show in pause menu that my microsoft account has been disconnected

If no (empty frame or „could not connect to realms“), swiping down the quick access for Wi-fi/other internet sources of my iPad and disabling them with Minecraft actively running in foreground or other means of disconnecting it from internet while it‘s in title screen, will „force“ a game crash. Restarting game, I check again.
It has the chance to temporarily fix account connection issues for me, so that I can normally access my worlds (and with a chance, also marketplace). I have to repeat this step up to five times till it succeeds.

But (problems):

  • Purchases made in marketplace have trouble synching across devices, simply won’t show on them for unknown time. (e.g. Purchased something in character creator on iPad which is showing these issues, it only appeared on other devices as servers responsible for purchases/accounts where restarted, as officially announced about a month ago.
    Or purchased a texture pack in marketplace on my phone that appeared as purchase on my iPad after about three weeks, using that „workaround“ repeatedly.)
    -On multiplayer, crashes occur randomly, about every ~1-15 minutes
    -Using a skin from character creator will cause it to „unselect“ and revert to default (except when using my own „classic skin“), often causing skin loading problems on other devices and vice versa, including Minecraft Earth.
