In my case it improved a little (idk why), at least it doesn't crash and now I wait 13 mins (time ago was like 40). Anyways, if you can at least open the game... maybe I could recommend making an special world a realm, then delete all the mc data (the realm is part of a minecraft special cloud, vinculated to microsoft, so it shouldn't be deleted) and then, download that world again. In my case I haven't tried because I can't afford it rn, but maybe is a solution if you just care about a world and can afford it. You are literally resetting the minecraft, but you will be able to download back a world. If you are unsure, then keep all the worlds in the Nintendo Switch Online cloud, and just delete your minecraft data in the console.

UPDATE ABOUT THE BUG (1.16.100)
I will try to post the most we know about this problem.
Important aspects for a better comprehension:
*The nintendo switch offers a service that lets you save things in the "cloud", so you have them as a backup, and you can redownload them when you want. That means that you can delet things in the console but have them saved in the NSC (Nintendo Switch Cloud). That system is similar to the "Realm Plus" one, that saves your realm "online" without having it on the console.
*This problem usually happens when we have +1GB of saved data (1.8GB in my case)
EXTRA: I've deleted most of my packs and things that I didn't use (worlds...) but I don't know why I remain with 1.8 GB.
Problem itself:
It has suffered some modifications by the time, but I will focus on 1.16.100; when we have +1GB of saved data in the console, we usually get 5-10 minutes in a black screen, and then 10-20 minutes in the red Mojang screen. That gives 15-30 minutes (average, sometimes /). In some cases, when it finally loads, it gives an error and the game crashes (that doesn't happen to me anymore, but could happen to others); That long wait was fixed around february (1.14, I think),-where with the same worlds and a similar amount of GB (+1.2GB) it loaded in less than 30_ seconds_ but now we have a "second round" that avoid enjoying our game.
Most of us have tried deleting what we can, reloading the data, looking for corrupted data... but sadly nothing worked.
What proves that the problem happens with +1GB?
If you save your data in the NSC and delete it on the console, you will see that you have around 600Mb and it will load in less than 15 seconds; samething if you try in a profile without a lot of worlds.
That is a temporary workaround, but for the people that have long-term worlds and just want to play the game with what we had (what is ideally) is not a solution to a bug that started to happe randomly after being solved.
I've tried giving the most details I can, but we have to also understand that is not a very descriptive bug, since it consists in a long wait. If there is any specific thing needed, please ask and we will answer gratefully. Thanks and we hope this to get fixed ASAP, since it is an important problem.

EDIT: At least it solved the crash, but well, I believe that we will have to wait for an "oficial" fix for the loading times.

Can we please get an answer about if this had been reported to the developers? It's becoming an insult, this is a truly annoying bug and should be a priority.
And now in the 1.16.100 it crashes when it (finally) loads the menu (The software was closed due to a error). And we are talking about +20 minutes loading times. I remember it was solved in february, but after 1.16.... it became worse and worse.
Ooof well, the 1.16.100 came to switch like two hours ago, so let's wait for all the platforms to update (you can't play together when someone has an older/newer version). It should fix that problem.
UPDATE: still happening in 1.16.100; but now the wait is longer in the red screen that in the black one.
@TroyF Ok, if you delete your minecraft data in the console but save it in the cloud, the worlds will be available again if you reinstall the cloud data (after an update, for example, to test if the bug was fixed). Just make sure to turn off "save data automatically" so you don't replace what you saved with a restarded minecraft. After deleting the MC data in the console, the waiting time will be of less than 15s.
If you just don't care about the worlds and want to get rid of them, you may forget about saving the current data in the cloud and you may just delete the mc data in the console to "restart" the game, like if it was bought again.
Sorry for any language mistake, I hope this to work. It is a temporary fix, but we want AN OFFICIAL FIX for this.
@TroyF You can save your data in the Nintendo Switch online cloud; then delete the minecraft data in the console and reinstall it. Remember to turn off "save data automatically" so your worlds remain in the cloud while you play MC in other worlds. You won't be able to play in your worlds for a while, but it will work as a temporary fix until an update is released.
We want this issue to be taken seriously, we've had this for a lot of time, and not even an answer. We can't play our worlds!
I have 5.7 GB free; I had to save on the cloud my mc data (1.8 GB) and stay in the initial 577 MB to work temporaly.
1.16.6 still hasn't been released on switch, I will keep this page updated.
Hello. To reproduce this issue:
1.Find an account with +1GB of saved data on MC on the switch.
2.Open Minecraft.
3.Wait for it to load.
Final result. it takes more than 20 minutes to load:
Expected result: to work as some updates ago (a waiting time no longer than 2 minutes).
Extra: if you try with an account without +1GB of saved data (577 MB, for example), or if you save it on the cloud and delete the mc console data, it will load in less than one minute.
Sadly a refund will just work for those with the digital version
