Thank you for the help! I now realize that the crash is, in fact caused by the contact of the enderman with the water.

In the process of building a enderman farm I went out about 200 blocks from the island and that's where this issue occurs. Ant sometimes the water source block just stands there (this is not caused by lagg for I get about 50 fps that far in the end). Thanks for your help.
