I figured it out. The custom touch controls setting somehow causes the paper doll to disappear. 

This bug seems to have returned in the latest update

I have update the description as needed but any video file I attempt to attach exceeds the file size limit because the bug takes some time to reproduce, so I have attached another link to a video that shows myself following the steps I have provided and successfully replicating the bug. 

As a user of the unofficial Linux launcher (only option for me because of my devices known issues) I can safely say this issue has not been patched, but with testing, it does not happen with actual android devices that you connect a keyboard to anymore, so that's a step in the right direction. I would love for this issue to resolved as fast as it can be, because it is severely effecting my survival, pvp, and parkour gameplay, limiting me and others like me who suffer from this issue, to certain movement patterns that are unnatural or uncomfortable. I really hope this issue is easy to fix, and that a fix for it can be rolled out as fast as possible, because it's the most annoying issue I, and others like me, face right now regarding minecraft bedrock as a whole.
