I play minecraft on windows 10 edition, on which my client is updated to 1.16.40. However my friends on Xbox that I would like to play with are on 1.16.100. After a ton of research, I realized that there was no way for them to upgrade, and no way for me to downgrade. When I try to join their worlds or they try to join mine, it says, "Could Not Connect to server; Outdated Client". Which makes sense, but because we are technically on different versions of the game, we cant play together. I tried various troubleshooting methods such as restarting, changing preferences, and updating drivers, but none seemed to work. Please help.

To connect you would need to update to 1.16.100
1.16.100 did add some limitations to the supported hardware it would run on, which is likely why your system has not been able to update.
