Ink sacs obtained from wandering traders cant be crafted or used for anything. Ink sacs from killing squid work as normal. Ink sacs from squid and traders do not stack.

Does MCPE-113983 describe your issue?
Cleaning up old tickets: This ticket had been set to 'Awaiting Response', but has not received a response from the reporter (~3 months+) so is being closed as Incomplete. Duplicate of MCPE-113983. The bug is already fixed, however if you optained the ink sac before 1.16.210 it still won't work.
