@unknown They will be added in a future update. (unknown which update that will be) In the changelog https://feedback.minecraft.net/hc/en-us/articles/360044928311 they said "We will update the missing sounds in a future update", so they will probably add them soon hopefully.
I cannot reproduce this.
This also affects the block hitbox outline, semi-transparent entities and transparent items. Affected items are stained glass, honey blocks and slime blocks and probably more.

They don’t even detect when you pick up items.

How to reproduce:
Place a farmland block somewhere
Stand a few blocks above it
Make sure that mobgriefing is set to true
Run this command:
/summon husk ~ ~-2 ~ {Health:1f,ActiveEffects:[{Id:20b,Amplifier:2b,Duration:999999}]}It trampled the farmland.

It is hard to see, but can confirm. This was once blocked by MC-221725. I am not sure if it is possible to fix this.
