A player has been repeatedly crashing my server using a hacked client over the past month. I would like to see if this exploit is fixable. I've attached the console logs.

Crashes such as these are now logged automatically, this will therefore be investigated further by the development team internally.
Based purely off the content of your screenshot it appears the crash is not due to a hacked client but due to the current issue dispensing bone meal into a grass block which is noted as fixed in the next release (MCPE-53033).
