Baby mobs missing heads

I'm in the Beta for the Xbox One version of Minecraft (1.16.100.56).

I recently noticed (Sep 17, 2020) that all baby mobs (baby pigs, cows, zombies, etc.) are all missing their heads.  I got a good scare from seeing a square with four legs walking around, but it's a bit disturbing to say the least.  Reloading the file or rebooting the console does not resolve this issue.
