First of all, I assume that bedrock dedicated server is just bedrock edition in general. Anyway, I'm on a hermitcraft-ish server and I named a zombie and put in in a boat under my friends bed. Oldest trick in the book. But then I came back and the zombie was gone. Nobody could have killed it, I spawn proofed the room it was in with string and nobody was online except me. I figured out that mobs despawned immediately the second I left the chuck they were on. For example, my horses (sad early game noises) and the chickens in my automatic cooked chicken farm are now gone. Hope you patch this, VOiD.

However, this issue is Invalid.
Unfortunately we don't accept issues related to External Servers here on the bug tracker, but please add more details if you think this also affects multiplayer over Realms, LAN, or XBL. Because that server could be using any number of different server softwares (many not made by Mojang) its impossible to tell where the issue is.
There is a known issue with mobs despawning on chunk borders which can be found over at MCPE-21416 and may be your issue.
If this is an issue that can be reliably reproduced and the server owner is using BDS please ask them to log a report on here as they will have far more information about the OS in use, version etc for a detailed bug report.
