This translation of the door that was in the photo was already translated a long time ago, did not know that it needed to update, although this never happened

The language options being blank is MC-122196, and the language being mixed is because not all strings are translated yet. Yes, I know, they were translated previously, but the translation files changed and haven't been updated yet.
Snapshots generally don't support translations.
I think these are two bugs. The first one, with mixed up language is probably due to some internal changes in the language files and is going to be repaired once the translators on crowdin.com had a chance to update.
The later one is something that probably has nothing to do with the mixed languages: The missing options in the language menu. Probably the default pack.mcmeta is either broken or it doesn't get read properly
