I launch the game, everything is fine but when I have to click either 'Multiplayer' or 'Singleplayer' or 'Options', or basically anything, I can't click anywhere. I re-installed the game about 20 times, different launchers, re-installed java, read about the issue but can't fix anything. Had my computer reset and shut down 10 times to be exact and I still can't seem to know from where the problem is, please help because I am hopeless..

This is a technical support issue, though try this:
Hold ALT and press TAB. You should see this window pop up:
Mouse over Minecraft and click it. Let go of ALT.

Then try going into fullscreen mode (F11) and check if you can click anything. If you can't try going in and out of fullscreen and check if you can click anything.

No idea lmao I tried clicking it too so I can see what it is but I can't click it either.. It's like I have only 2 clicks everytime I launch the game..

It looks like some sort of recording software overlay... Try finding it and disabling it. Maybe that's what's causing it to not register any clicks.

Mmyeah found it. Seems like it's GeForce Experience but can't find from where can I disable this lol

It looks like you have Windows 10; Try opening Task Manager by pressing these keys in once: CTRL + SHIFT + ESC and find GeForce Experience's task. Right click it and click 'Open File Path" (i'm in Poland, so you'll see these subtitles in polish)
Run it and find something that could relate to that overlay.
EDIT: If it even has a GUI, I don't have an NVIDIA graphics card, I'm using AMD
