This happened while playing in survival mode. I was exploring a small village in a plains biome on my horse with diamond horse armor and after staying in the village for a few minutes a vindicator raided the village I tried to defeat it but it killed me instead. I respawned at the same village because I slept in one of the beds and went back to collect my stuff and not only was my stuff gone but the vindicator and my horse as well.
