Well, when using the spawn egg, you can only get hundreds of the default villagers to spawn, no other kinds. See picture.
Also, its super not very fun for you to waste hours building in a nice village just to have one rain storm come and every villager get killed. Just like the raiders. Not fun at all.

Duplicate of MC-140938. This is now intended since villagers could select their profession based on certain utility blocks in 19w11a.
They have to have an available bed and a workstation to choose a profession. I have used a spawn egg and this worked fine in 19w11b.
