This issue appears to still be happening in 24w45a with no changes in behavior.

I have encountered this issue in my main survival worlds created after 1.21 came out, though the issue doesn't seem to be consistently reproducible. This issue often does not happen when the trial chamber is just loaded in.
This has been fixed in 1.21 Pre-release 1 for every trial room type that has a breeze spawner.
This was fixed in 24w21a. (In 24w20a, it still happened.)
When using a riptide trident in the offhand, you can also throw it too, which will play the riptide sound at the trident's location.
This no longer happens in 1.20.5 Pre-release 4. The breeze will always jump or pathfind at a certain time after it shoots, meaning its attack animation won't be interrupted.
Can confirm. A fireball reflected using the knockback enchantment will travel no faster than a fireball reflected without the enchantment.
Here is a command to help reproduce this issue by summoning a stationary fireball:
/summon fireball ~ ~1 ~
From my testing, this stopped happening for 1.20.5 Pre-release 1 and later. In 24w14a, the ghast fireball will fly at an arc when hit with the knockback enchantment, but will fly straight under the same conditions in 1.20.5 Pre-release 1.
This is also noticeable when having the trial omen effect near a trial spawner, making the lingering potions that spawn from above easier to avoid.
This no longer happens in 1.20.5 pre-release 1, even when deflecting a fireball while falling downwards for more than two blocks.
This relates to MC-269993, including the fact that you can hit large fireballs multiple times to get launched even higher just like with wind charges.
