When fighting Blazes, Fire Resistance potions did nothing. I got caught on fire from their projectiles and the fire they left on the floor and swiftly died to it.

Are you sure you weren't just In melee range of the blaze? It is not a well known fact, but blazes have a melee attack that cannot be ignored by fire resistance (but can be reduced by armor).
