The 1.15.1 version of the game works, but it's very slow (1 to 4 fps, with a lot of freeze) on old hardware (look at the below environment section).

Hello, I found a very ugly bug on Minecraft Launcher 1.6.93 and Minecraft launcher 2.1 that makes the loading of the game freeze at 50 % on old hardware.
The bug doesn't appear on recent hardware.

Maybe, but Minecraft 1.12.2 and older releases works fine.
Minecraft 1.7.10 and older are defenitively playable at 60 fps.
It was also playable in 1.5.2 and older when I was a child and that my hard drive was only a PATA one, not a SATA one.
And heavier games than Minecraft like Tomb Raider 2015 also works fine.
Minecraft may still work on computers that do not meet the minimum system requirements, but there's no guarantee and you won't receive any support.
Don't even understand why there's a minimum system requirements :
The real minimum system requirement is does Java 8+ and LWJGL works or not.
I tried Minecraft 1.16.4 on early 2000 AMD x64 computers :
Windows 7 sp 1 x64
single or dual core cpu
512 mb or 1 gb AGP gpu
and the game worked successfully at 60 fps (vsync).
Note that 10 years ago, I had the samekind of hardware but Minecraft was using OpenGL 1, not OpenGL 2, my video card was an 128mb one, and that the game was already worked perfectly on Windows XP x86 and Linux.
Newer versions of Minecraft use newer technologies that aren't supported by older processors and graphics cards. Minecraft 10 years ago was a lot simpler and way less resource-intensive than the Minecraft we have now.
Minecraft may still work on hardware below minimum requirements, but no support is provided if you find any issues.
