Once you open debug screen with debug pie it cannot be hidden. After hiding debug screen debug pie stops updating but it is still visible even in menus. Game must be restarted to hide it.

However, this issue is a Duplicate of MC-170816.
That ticket has already been resolved as Fixed. The fix will arrive in the next version or is already included in the latest development version of the game, you can check the Fix Version/s field in that ticket to learn more.
