When the piglin holds the bow, it will try to attack and follow the enemy eventually stood there not moving.

Use the following command:

/summon minecraft:piglin ~ ~ ~ {HandItems:[{id:bow,Count:1b},{}]}

Linked issues

Piglins don't know how to use bows. Same as with zombies.

But piglin will still follow the enemy and do nothing.
And the zombie can still hit the enemy with a bow.
