When in the nether and trying to hit back ghast fireballs on my 1.15.2 server, the fireballs don't get hit, and instead just go straight through your sword and hit you, or just continue past.
My friends in the server also have this problem as well, we can typically hit the first couple fireballs and then the rest after that are just broken and don't allow you to hit it.

In the video, I tried jumping, standing, moving all while trying to hit fireballs. None of those worked. When I jumped, it just went through still and collided with me exploding.
Based on the video, it's a combination of lag when the fireball gets close, the fireball hitting something else instead, or just you missing the ghast fireball. Please try to reproduce this again, make sure that this time there isn't as much as (lower the video settings), and also make sure there are no Pigmen around.
Jump before trying to hit the fireball. You should be in air probably
