When I pause the game, it doesn't actually pause. Time still goes on and everything still moves. It seemed to be fixed but it's an issue again.

Have you thought to check if lan is open for the game

Unable to reproduce, being on a server or having opened the world to LAN does not make the game pause when pressing Esc.
