When curing a villager, if you leave or unload the chunk (such as walking away or logging off) while the villager is either a zombie or in the process of curing, the trades reset and the curing loses its effect. If a villager was fully cured, and you left the chunk, it would return to how it was when you first cured it.

It’s a third party host, a snapshot server running on sources such as Lithium and Fabric I believe, but I’m not entirely sure the specifics of it.

Your game, launcher or server is modified.
If you can reproduce the issue in a vanilla environment, please create a new ticket.
Any non-standard client/server/launcher build needs to be taken up with the appropriate team, not Mojang.
Any plugin issues need to be addressed to the creator of the plugin or resource pack.
If you have problems on large servers, such as The Hive and Hypixel, please contact them first as they run modified server software.
