I'm playing in 20w19a, and villagers simply won't lose workstations. All possible workstations in their area have been broken, they haven't been traded with, but they still retain their jobs. However, this issue is highly inconsistent - before I had issues with three villagers not losing their workstations, then one of those ones did lose their workstation, but now all of my villagers are stuck as librarians.
Again, there are no other workstations in the area - no barrel, no lecterns, nothing - and they have NOT been traded with.

Is this on a server? If so, another player may have traded with them, causing their profession to lock.
@Galaxy_2Alex It is, but no, nobody else traded with them. They had gained no experience, they had not ranked up. Their profession was NOT locked.
First: villagers only notice the loss of their work station during work hours. If it's late enough in the day they will stop "instantly reacting" until the next day.
Secondly: it seems to be normal for villagers who have been around their workstations for several days to be stubborn and refuse to forget their missing workstation for up to 3 days. THIS MAY BE UNINTENDED BEHAVIOR, I'm not sure. But if you're still having the problem after 3 in-game days then something has indeed gone wrong. And if there are no workstations around at all and they've changed during that time to anything but unemployed then once again something has gone wrong.
Btw I've been playing in 20w19a for multiple (real world) days and haven't had problems changing villager workstations. I would recommend focusing on 1 villager and locking him in a house (I add a trapdoor to the roof and a ladder on both the inside and the outside to get to the roof...leave the bottom rung off to avoid villagers and monsters accidentally using the ladder).
